Asparagus Chroque Monsieur

Asparagus is part of the Lily family, which is part of Allium vegetables like onions and garlic. Asparagus is an excellent source of vitamin K, folate, vitamin C, Vitamin B and magnesium. It is an anti-oxidant that protects the body against harmful free radicals that forms due to oxidative stress. This is a delicious and easy way to incorporate asparagus into your diet.

Ingredients
  

White sauce

  • 1 tbsp butter
  • 2 tbsp plain flour
  • 1,5 cups milk, warm
  • salt & pepper
  • 80 g cheddar, white & grated

Other

  • 8 slices bread
  • 2 tbsp Dijon mustard
  • 8 slices Gypsy ham
  • 12 spear asparagus, sliced into thin strips

Serving suggestions

  • 1 cup micro-herbs, fresh

Instructions
 

  • Preheat the oven to 200 degrees Celsius
  • Melt the butter over a low heat and stir in the flour. Slowly add the milk while stirring to prevent clots forming. Add the salt and pepper to taste and stir until smooth and cooked.
  • Remove from the heat and add half the grated cheese to the sauce and mix through.
  • Toast the bread lightly and spread with mustard. Place on a baking tray.
  • Arrange the ham and asparagus on the toast and add the remaining grated cheese.
  • Cover with white sauce and bake for 5 min, then grill for another 4 min until light brown.
  • Serve warm with a dash of micro-herbs.
